What is German Beefstick Anyway?
  I married a girl from Indiana just over 20 years ago.  During one of the first visits to the in-laws my mother-in-law served a cheese and meat platter.  On it was this sliced meat that wasn't quite like summer sausage, but also wasn't the typical, cured charcuterie like a dried sausage either.

 

It was delicious so asked what it was.  'German Beefstick' was the answer I received.  "OK, what's that?"

Turns out it was made by my mother-in-law.  It's 100% ground beef, cured, flavored with spices and then dried out in the oven.  The great thing is that it is not cased like your traditional summer sausage.  So, most of the fat renders out, the flavors intensify and you are left with a very flavorful log 'o beef.

Being who I am and loving to smoke stuff, I got to thinking how much better it would be if it was smoked low and slow.  That's what we do here at Artisan's Smokehouse.  We spice the beef, cure it, smoke it, slice it and package it up for you.  It's ready to eat!

Serve it with your favorite cheese, crackers, other cured meats, beer, wine, or whatever floats your boat.
